So, there are actually more peaches grown in South Carolina, than in Georgia – and Georgia is the peach state. Go figure.
My farmer’s market that I go to frequently, always has the best stuff – this guy travels around the state, getting the best of whatever is currently in season. The peaches here are so big and so juicy and so sweet, they are better than any peach I ever ate in Houston. SOOOOO, you know what that means – I had to try my hand at canning some. I get bored with freezer food and often worry about if the electric were to go out due to a storm, which has happened here.. that I would starve. Extremely irrational thinking but hey, motivated me to do something besides jelly. I learned a lot when doing this particular type of canning and that is to prep all of your fruit first, even if you have to leave it in the fridge overnight, just prep first. If you try to sterilize, prep, and can all in the same day you will make yourself crazy. Also learned something else…canning heats up the kitchen a lot – so you should prep one day, and can in the morning the next. unless you like to suffer.
So out of the box of peaches, I have regular peaches, peach butter, and peach jam with cinnamon.
