Homemade Ravioli… of the butternut squash variety (with garlic) and laminated pasta

It is a lot of fun to engage houseguest in helping in the kitchen.  It makes everyone feel part of the process – this is homemade ravioli filled with butternut squash puree with roasted garlic.  I can’t tell you excactly how good this was.  We sauteed a small amount of shallot in butter, then added the cooked ravioli and tomatoes for about 2 minutes – it’s no wonder italians have some of the best food in the world.

We also made our attempt at making laminated pasta – which is nothing more than sticking the herbs into a fold of the pasta before you roll it through the machine.  It is VERY pretty and if you are using some flavorful herbs such as basil, or tarragon it adds just a smidge of unexpected flavor.
