So I got this cookbook from america’s test kitchen – cooking for two. this was delicious. I will share the recipe on CCK..when I get to it, but basically it’s got cream cheese and herbs stuffed under the skin of the chicken. the carrots have just a smidge of brown sugar and butter – pop it all in the oven at 400 (I think) and it all cooks together and is done at the same time. clean up is pretty dang easy thanks to parchment paper.
